

Fume Extraction at the Tecnocampus University of Mataró
At Morgui, we have had the honor of actively participating in the construction of the gastronomic laboratory at Tecnocampus University in Mataró (Barcelona).
The laboratory hosts practical classes for students of the Bachelor's Degree in Human Nutrition and Dietetics, as well as students of Physical Activity and Sports Sciences, postgraduate training, and outreach initiatives aimed at high school and vocational training students (intermediate and advanced levels) related to food.
The laboratory's modern facilities include high-tech ovens, vacuum sealers, low-temperature cooking systems, and a classroom area equipped for masterclasses. In addition to all this equipment, there is a ventilation system, which we will explain below.


Custom-made extractor hoods
As you can see in the images, it's an open-plan room with several small cooking areas that don't generate large amounts of smoke. For this specific situation, 11 BERET model hoods were chosen, one for each work area. The 400 mm high Beret hoods were ideal for integration into the false ceiling, creating a uniform and much more aesthetically pleasing environment.
In addition, a HORNO model hood was also installed to extract smoke from the room's professional oven. This hood is characterized by having the filter collector inverted at the front. This feature is ideal for capturing the smoke released when the oven doors are opened.
Beyond the range hoods, smoke extraction is possible thanks to the UNIC 22/11 ventilation box. This belt-driven extraction box features a single-inlet centrifugal fan approved for operation at 400°C/2 h. It also incorporates a tensioning base to adjust the belt tension when necessary.
This model is detachable and easily accessible, making it very convenient for cleaning, maintenance, or replacement parts.
To compensate for the extracted air, a supply air system is essential. The BASIC 15/15 box fulfils this function by introducing outside air into the room, thus ensuring adequate comfort conditions.
